Farmhouse Sausage Hash

Who doesn’t look forward to a cooked breakfast or brunch over the weekend? But does anyone relish the clearing up at the end? Well say “hello” to the one-pan Farmhouse Sausage Hash – a recipe I created for my friends at Porky Whites using their amazing Surrey Sausages. This easy meal will leave you feeling replete for hours!

Method

Bring 3 cm water to the boil in a pan and add the potatoes. Simmer for 5 minutes then drain. Or you can use leftover cooked potatoes and skip to the next step. Add 2 tbsp oil to a pan and add the potatoes. Colour for 10 minutes until golden. Add the onion, peppers and sausages and cook for 5 minutes. Add the smoked paprika and chilli flakes for 10 minutes more. Wilt in the spinach and make 4 wells in the pan for the eggs. Crack the eggs into the wells and cover the pan for 8 minutes.

Ingredients

6 Porky Whites Surrey Sausages, cut into bite sized pieces

200g potatoes, diced into 1 cm cubes (or use leftover cooked potatoes)

1 onion chopped

1 red pepper chopped

2 garlic cloves crushed

1 tsp smoked paprika

1 tsp chilli flakes

2 tbsp olive oil

50g spinach

4 eggs
