Spice up your mealtime with this quick and comforting Thai Green Sausage Curry, bursting with coconut, lime, and fragrant herbs. Perfectly simple yet packed with bold flavours, it’s a one-pan dish that will transport you straight to Thailand in under 30 minutes.
1. Remove skins from sausages and cut into chunky pieces.
2. Fry the sausage chunks in a little oil until they take on some colour.
3. Add the Mae Ploy curry paste and stir until the sausages are well coated.
4. Pour in the coconut milk, bring to a gentle simmer.
5. Add the beans and courgette, and cook for about 10 minutes until sausages are cooked through and veg are tender.
6. Season with fish sauce.
7. Finish with lime juice and fresh coriander. Serve with jasmine rice.

- 4 Porky Whites Sausages (turmeric and coconut flavoured if possible)
- 1 tbsp Mae Ploy green curry paste
- 200ml Coconut milk
- 100g Green beans trimmed
- 1 Courgette, sliced
- 1 tsp fish sauce
- Fresh coriander & lime juice, to finish
- Jasmine rice, to serve
