Thai-Inspired Sausage Curry

This Thai-inspired sausage curry is quick, simple and truly delicious. Perfect for lunch or dinner. Serve with jasmine rice or enjoy a warming bowl on its own. Ready in five simple steps.

Method

Heat half the oil in a pan and add the sausages. Colour the sausages all over and then set them aside. Add the remaining oil and onion. Soften for 5 minutes before adding the dried spices, ginger, garlic and chilli. Stir for a minute then add the coconut milk and the brown sugar. Return the sausages and simmer for 20 minutes. Squeeze in the juice of 1 lime and serve the curry topped with fresh Thai basil, the sliced spring onions and extra lime wedges.

Ingredients

2 packets of Porky Whites Premium Pork Sausages with Turmeric and Coconut or any of your favourite Porky Whites sausages

1 tbsp coconut oil (or vegetable oil)

1 small onion chopped

3 garlic cloves crushed

1 tbsp ginger grated

1 tbsp turmeric

1 tbsp ground cumin

1 tbsp ground coriander

1-2 fresh chillies chopped

2 tsp brown sugar

400ml coconut milk

3 chopped spring onions

Juice of a lime plus extra lime wedges to serve
