I'm made of sausage! An interview with Meat Management

Carrying on a Proud Family Tradition: An Interview with Fran Wyatt, Managing Director of Porky Whites

For nearly 90 years, Porky Whites has been synonymous with quality sausages made with integrity, heritage, and a hearty dose of family pride. Today, Managing Director Fran Wyatt – the third generation of the White family to lead the Surrey-based business – continues that legacy while embracing innovation and change.

A Legacy That Began in 1935

Porky Whites’ story began in 1935, when Fran’s grandfather and great-uncle, Jim and Harry White, set out to make the best-tasting sausages in their hometown of Ewell, Surrey.

“From those humble beginnings, we’re now a nationally recognised brand with a growing foodservice arm,” Fran explains. “The name ‘Porky Whites’ started as a nickname, because our family name is White – though my grandfather never actually liked it!”

The family’s entry into retail came almost by chance in 2002, when a local ASDA manager spotted one of their vans and recalled queuing as a child to buy their sausages. From there, the retail brand grew organically, and the same products still sell today – a true testament to their timeless appeal.

From the Factory Floor to the Boardroom

Fran’s connection to the business runs deep.

“I left school at 16 not knowing exactly what I wanted to do – but the business is in my blood,” she says.

She trained as a butcher, worked in the shops, and even spent time running machines on the factory floor. Later, she broadened her skills with a CIPD qualification in HR before stepping into leadership.

“There isn’t a machine in the factory I can’t run, ”Fran notes proudly. “I understand the nuances of production and have huge empathy for my team because I’ve been there myself.”

Balancing Tradition and Innovation

While Porky Whites remains rooted in tradition, Fran is passionate about embracing change.

“We’re still producing sausages the same way we did in1935 — we still mince and mix our product, and we don’t bulk up. But I’m also areal person for change,” she says.

The company continues to innovate with new flavour profiles, such as Succulent Hog Roast & Apple and Farmhouse Herb Pork Sausages, now favourites in Tesco stores. New lines like Coconut & Turmeric are finding success with Ocado customers.

Automation and technology have also reshaped production. “We used to do everything by hand — now we’re fully automated, ”Fran explains. “We’ve recently integrated AI into our stock management systems for better forecasting. It’s just the start, but it’s exciting.”

People, Culture, and the Next Generation

As the first woman to lead Porky Whites, Fran brings a people-first mindset.

“I’m very interested in people and culture,” she says. “When I took over in 2019, two of my team members were promoted to management within eight months. They took a leap of faith, and now they’re flying.”

Her commitment extends beyond her own staff — Fran is deeply invested in inspiring the next generation. Both her children, Alanah and Will, are following in her footsteps, training within the industry.

Porky Whites also partners with initiatives such as TeachFirst and the Halow Project, offering young people and adults with learning difficulties real opportunities to experience the food industry.

“If you resonate with even one or two children a year, that’s something,” Fran says. “It’s about opening doors and showing what’s possible.”

Community Spirit and a Loyal Fanbase

Few brands can boast their own fan club, but Porky Whites can.

“We have the Porky Whites Appreciation Society,” Fran laughs. “Someone created it on Facebook, and it’s grown over the years. People even wear pin badges!”

It’s this kind of community spirit that makes the brand more than just a sausage maker — it’s part of people’s lives and memories.

Highlights and Recognition

Under Fran’s leadership, Porky Whites continues to earn industry acclaim. The company recently won UK Supreme Sausage Champion at UK Sausage Week and Britain’s Best Burger at the Meat Management Industry Awards.

Fran herself was honoured as a finalist at the Women in Meat Industry Awards, and she also achieved a lifelong dream by joining the Worshipful Company of Butchers as a Liveryman.

“Being recognised among so many incredible women was an absolute career highlight,” she reflects. “I love this job, this business, and the people in it. The camaraderie and passion across the industry are everything I hoped they would be.”

Looking Ahead

As Porky Whites approaches its centenary, Fran is committed to blending heritage with progress — keeping the brand’s soul intact while leading it into a bright, innovative future.

“At our root is quality and integrity,” she says. “That’s never changed — and never will.”
