In an industry built on tradition and taste, Francesca “Fran” Wyatt, Managing Director of family-owned sausage company Porky Whites, is proving that resilience, creativity, and authenticity can reshape even the most established of legacies.
Jack sat down with Francesca to talk about entrepreneurship, leadership, and how she’s using both grit and innovation to drive a century-old brand into the future.
“I come from a generational family business,” Fran begins. “We’ve always been in the meat industry—farming, butchery, everything in between.”
Her earliest memories are of Saturday mornings at Smithfield Market, tagging along with her dad and sisters. “I loved the hustle of the factory, the smell of fresh food, and even hand-tying sausages,” she laughs. “I think I always had it in me—it just took a while to realise where I fit.”
After a brief stint at college, her dad made sure she stayed busy. “He said, ‘Right, no lying around,’ and I started in one of our butcher shops.” Working alongside two seasoned mentors, Fran discovered her creative side through butchery—building beautiful meat displays and crafting pastry dishes like Beef Wellingtons. That passion led her to train others, visit other shops, and even sell handmade products from the back of her car.
When asked where her relentless energy comes from, Fran smiles.
“It’s about showing up every day, no matter what. Hard work today means being resilient, seeking opportunity, and never hitting snooze—literally and figuratively. I still wake up early with the team even though the factory runs fine without me. I want to be there. I care.”
Fran’s creativity, she says, is fueled by the way she sees the world.
“I’m dyslexic, and that’s been both a challenge and a gift. Yes, I struggle with spelling and emails, but it’s also a strength. I communicate visually and emotionally.”
She even includes a note in her email signature explaining her dyslexia—something that opens conversations rather than closes them. “I’ve learned to own it. I’ll sit in a room full of accountants and say, ‘Please explain it to me like I’m five.’ That honesty has been powerful.”
It’s that openness, she explains, that allows her to focus on her strengths and surround herself with people who complement her skills. “Our fractional CFO is brilliant—he explains things in my language. That’s leadership: knowing where you shine and where you need help.”
Every legacy brand faces its defining moment. For Fran, that came in 2019, when a major supermarket contract dispute nearly brought Porky Whites to its knees.
“It was the worst time of my professional life,” she recalls. “The business almost collapsed. I stepped in as acting Managing Director and rebuilt from scratch.”
That experience, while painful, became the foundation of her leadership philosophy.
“It took years to stop letting fear define me. But I learned resilience, leadership, and the importance of surrounding yourself with the right people. Trust your gut. Intuition is everything—and if someone isn’t right for the business, deal with it quickly. Don’t let bad fits fester.”
Today, Porky Whites is thriving. “We’re no longer just about sausages—though we make over 30 types daily!” Fran laughs. “We also do burgers, meatballs, and more. We supply major supermarkets, food service companies, ready-meal providers, and high street butchers. Our brand blends heritage with innovation.”
When asked what makes a great sausage, Fran grins. “It’s an art and a science. The mix of meat, seasoning, water, and casing all has to be right. I’ve made sausages I thought were terrible—and people loved them! Taste is subjective. Even the name matters. I once made a turmeric and coconut sausage that didn’t sell, but if I’d called it Thai Style, it probably would’ve flown off the shelves.”
Far from being stuck in tradition, Fran has fully embraced technology.
“We now use AI for market research, flavour trends, and even packaging design. It’s saved us so much time and money. Two of our latest products use AI-generated pack visuals—it’s been a game changer for small businesses like ours.”
Fran’s advice for anyone building a brand is refreshingly candid:
“Know your strengths, accept your weaknesses, and surround yourself with brilliant people. Listen to your team, test your products, and always be open to feedback. And above all, don’t be afraid to fail—every day is a learning day.”
When asked about one financial lesson she wishes she’d learned earlier, Fran doesn’t hesitate.
“Start a pension. I didn’t—I thought something would come along, and it didn’t. Now I’m nearly 50 and only just saving properly. Oh, and stop tapping your card everywhere! Withdraw cash and feel the money leave your hand—it changes how you spend.”
