Egg Breakfast Muffins with Sausages and Greens

Forget blueberry and chocolate, these are the breakfast muffins you need to try!

Method

For the sausages -

- Preheat the oven to 190°C.
- Place the sausages on a baking tray and cook for 20-25 minutes, turning halfway through the cooking time, until thoroughlycooked.

For the egg muffins -

- Preheat oven to 180°C.
- Whisk the eggs with finely chopped sausage pieces, salt and pepper in a bowl.
- Add any of your preferred extras to the mixture and continue whisking.
- Butter the muffin tin and pour the egg mixture into each section, filling it up to the top.
- Cook for 10-15 minutes, until the egg muffins are raised and golden.
- Serve with a side of toast and extra greens (we love avocado, asparagus or grilled tomatoes)!

Ingredients

2 Porky Whites ‘Traditional’ Sausages (already cooked)

2 eggs   

Optional extras: grated cheese, spinach, asparagus, tomatoes
