(Serves 4–6)
1. Preheat your oven to 180°C (160°C fan) / 350°F and line a loaf tin with baking paper or lightly oil it.
2. Mix the meatloaf:
In a large bowl, combine the turkey mince, Porky Whites Sage & Onion Sausagemeat, onion, carrot, apple, garlic, egg, breadcrumbs, milk, ketchup, thyme, paprika, and a little salt and pepper.
Mix gently until everything is just combined — don’t overwork it.
3. Shape & glaze:
Press the mixture into the prepared loaf tin (or shape by hand on a baking tray).
In a small bowl, whisk together the ketchup, brown sugar (or honey), and mustard, then spread evenly over the top.
4. Bake for 50–60 minutes, until golden and cooked through (internal temperature should reach 70°C / 160°F).
5. Rest & serve: Let the meatloaf rest for 10 minutes before slicing. This helps keep it juicy and easy to cut.
For the glaze (optional):
2 tbsp ketchup
1 tbsp brown sugar or honey
1 tsp mild or Dijon mustard
