Diet Friendly Smoked Paprika Sausage Casserole

The light and easy winter warmer.

With winter’s icy grip really starting to take hold and many of us struggling to stick to those New Year diets, here’s a brilliant reader’s recipe that’s warming, utterly delish and incredibly low in calories.

And if that isn’t a winning combination, frankly we don’t know what is.

It comes from Porky Lights fan Jan Stewart of Rothes, Scotland. Congratulations Jan, your ‘Eureka Paprika!’ moment wins you a month’s supply of delicious Porky Lights sausages.

“This recipe is a firm family favourite and so easy to prepare,” writes Jan. “I’ve been a Slimming World member for 2½ years and I'm always on the lookout for new products that are tasty and help me stay on plan. Your Porky Lights sausages tick all the boxes. They’re low in calories and low in fat but deliciously meaty and go so well with the smoked paprika – it’s a perfect combination!

To make my Smoked Paprika Sausage Casserole you’ll need:

  • 6 Porky Lights Sausages
  • 2 onions, diced
  • 2 peppers, diced
  • 2 carrots, diced
  • 1 tin of baked beans
  • 1 carton of passata
  • 1 tin of chopped tomatoes
  • 8 mushrooms, sliced
  • 1 tablespoon paprika
  • 1 teaspoon smoked paprika
  • 2 cloves garlic, crushed
  • 2 tablespoons Worcestershire Sauce
  • A sprig of fresh thyme
  • Salt and pepper

Then just brown the sausages in an ovenproof pan or casserole dish. Simply add in all the other ingredients and pop into the oven at 180ºC for 1½ hours. It’s as easy as that – and so tasty!

By the way, I heard about Porky Lights from another Slimming World member and the only place I can get them is in Costco so I have to make a 2½ hour round trip to get them. So worth it though.”
